If your Eng and Trans Temps( which should be almost identical By the way) climb to 225 deg and stays there during the duration of the climb and then cools back down to 190 deg on the incline --Your coach is running Normal.
You need to learn to Manually drop gears and keep the rpm's way up to around 2200 all the way up. This advice is directly from Cummins as I called them when I thought I had an overheat issue way back in the day.
