I had trouble with my low coolant light some time ago. Pulled out the probe. Cleaned it. Coated it with some lube, forgot what, and haven't had any trouble since. My 2000 Diplomat has the plastic tank. The probe is in the top of the tank. It has a single wire screwed to it. The probe is press-fit in the tank. Some twisting and turning with vice grips will get it out.
