Most probably located in your overflow tank.

Are you looking for "Level" or "Temperature"?
CAT engines don't have a Level sensor, so if that is what you have it would have been installed by the Coach manufacture and not located on the engine.
I would check the Surge tank (as suggested) and at the top of the radiator.

On my 2003 Winnebago the sensor is on the back of the coolant reservoir tank. I have a back mounted radiator so it is not accessible from the front. My rig has a removable cover in the master bedroom that made it easy to replace the sensor from the back.
