Wow you have a lot of issues and questions that need answered before you can really get some good help.
How much water was in the PW tank? Most people don't realize that this is your ballast and depending on how much is in it can greatly affect the ride quality. You should fill it before you leave and then see if you need to dump some as you travel. The weight helps to compress the rear springs and soften out the ride.
Also SLOW Down, the trip is part of the adventure. If you are in that big of a hurry, then catch a plane.

Your statement is surprising since from what I've read, the typical experienced motor home owner would tell you not to carry much water in your fresh water tank, since you don't want to be carrying several hundred pounds of water weight.

I always have a full water tank and empty holding tanks while traveling. Additionally, I try to keep the fuel tank to no less than 2/3 full. If you have ever been stranded due to a break down or found yourself in a situation where you have to spend an unexpected night or 2 in a Walmart lot you'll understand.

Traveling with an empty water tank is usually recommended by those going 100 miles from home to spend the weekend at the local state park.

If your motorhome is not capable of carrying full tanks then what's the point of having them? I mean who needs a full water tank in a RV site?

Yes, and if you go back and talk to some of those that have decided to fill the Potable Water Tank and then take a trip they will most likely tell you what a big difference the weight makes as far as ride comfort.
Now the other thing you must take into consideration is, how much "STUFF" you have loaded in the storage compartments and whee that "Stuff" is. You will be amazed at how much extra weight that "Stuff" adds. So I would recommend that you get your MH weighed with all the normal "Stuff" you carry on a trip and a full tank of fuel to check your weight.
Remember, weight distribution can make or break the ride quality along with tire air pressure.
