New Freelander 21RS and Newbie question

Hi all! My husband and I just christened our new Coachmen Freelander 21RS which is 24 ft. Everything went well and worked well, amazingly! We got a 2022 and were nervous hearing the way things are manufactured during this time. Guess we got lucky so far. New to a Class C, also, and learned a lot on this trip 10 miles from home "just in case". So, you are all experienced and we needed some advice:
1) Those of you with the full queen size slide that has annoying split around the knee, how do you level the mattress, so it does not veer downhill a couple inches as it drops from the carpeted slide? That really bugged us and put strain on back. We were thinking to go get a piece of 2" foam cut to fit the 34" x 60" space and place it under after slide is out?
2) We have the supposed "upgraded" mattress that is still very rock hard to us. We have a 1" topper (left over from a house) and it did not help. Has anyone replaced entire mattress with a memory foam mattress that can still work with the slide and if so, do you have any links? We saw a 6" for $289 on Amazon we think maybe could bend enough to fold over to bring slide in...?
Well, almost all our questions are sleep-related at our age, but one:
3) there seems to be NO control knob on Freelander 21gas water heater for temperature. Our LP 6 gal heater got HOT so fast, but when running the faucet it really came out scalding. Do ya'll just remember to turn the sink faucet lever to the left to balance temp manually to avoid burning yourself? We looked inside our heater and for sure no temp control. Is this normal? It is seriously hot, very good, but have to run kitchen sink carefully to balance temp?

We are so glad to have this forum and thank you all for welcoming us. We are in San Diego, CA and love roaming the great outdoors with just the two of us and our dog. We have booked our "big trip" to the Sierras in spring and want to get all the things we can under our belt before we are a long way from home. Also, anyone who want tips for San Diego area, just ask- we know it well around here!

I cannot help you on questions 1 & 2 but can assist on question 3.
I am assuming you have an ATWOOD 6 gallon LP gas hot water heater.

Here is the link to all the factory manuals for your RV- would be a very good idea to bookmark it.
- Go to COMPONENT MANUALS then APPLIANCES.

Good hunting.

We added a pull over topper that pulls the mattress together and have not had a separation problem. Ours is a 2018 model and we have done a few upgrades to make it more enjoyable. We live in Bay area and have really enjoyed our 21RS. We tow a 2015 Sonic and that gives us a sense of freedom to explore, using the rig as a base camp. Our next investment is a Battery powered generator that we can use on the rig or at home. Click image for larger version
