First check another door and latch and see how the mechanism works, both locked and released. Once you understand how a latch works, check the one that is not closing. If the latch is working, then you need to adjust the striker ("D") shaped ring mounted to the door frame. The striker is held in place with two 7/16's bolts.
Since the coach flexes, there is no perfect adjustment, as the door and striker will not always line up in the same spot. The best you can do, is get it centered, as close as you can, so there is equal play up and down.
Once you know and understand where the striker catches the latch, close the door slowly and watch the two line up. Loosen the two 7/16 bolts, but leave them tight enough that you have to tap the striker with a wrench or small hammer to adjust. This way, you won't lose the small adjustments you make because the striker moved too freely.
Once you get the height of the striker adjusted and the door closes/latches easily, then you need to adjust the striker in/out to close the door tightly. Adjusted too far back into the bay, the latch will not secure to the striker. Too far out, the door will not seal.
When I adjust mine, I get comfortable on a rolling mechanics chair and take my time to fine tune each door.
