I understand that there are amperage limits but is this typical? is there a way to maybe marshal the power in a more efficient way, is there perhaps an issue with my inverter? Any suggestions/input will be appreciated. I just want to make sure I am not doing something wrong or maybe just expecting too much. Thanks.

The ME2012 is rated at 2,000 watts. Your electric heater can be 1,200 to 1,500 watts and a resistance hotplate anywhere from 900 to 1,500 watts and for an induction hotplate 1,800 watts, so you are putting more load on the inverter than it can handle.
