Our dining table is on the passenger side in our Tiffin Phaeton. We have a fine view of our neighbor's sewage hook-up while eating.

I have wondered about that same thing as well. But I would never ask a question like that in a RV forum. What were you thinking? This is not the place to ask questions about Motorhomes for goodness sake. Perhaps a swap shop or a sewing group would be a better option. But I have also noticed that most of the Motorhomes I see for sale have their dinette on the driver's side as well and I assume that's why the question came up. I prefer looking out at all my belongings I have strewn out under my awning as I feast at my table.

One of the main reasons we bought the coach we did, was the floorplan and the length. We can entertain a good crowd with the dinette across from the couch and driver's and passenger's seats turned around. For a shorty coach, it feels very roomy - plus access to everything with both slides in is very nice...
We've been in coaches where the dinette and couch are side by side on the same wall and folks are getting cramped necks trying to have conversation with seats all full. To each their own, but buying a floorplan you don't like, well, I don't quite understand that...
I guess maybe I'm off track a bit, as OP is really complaining that a lot of choices don't offer what they'd like? Keep shopping then...

I have no idea why so many rigs have the kitchen on PS and dining area on DS.
We both like the kitchen sink (not in a slide) and the shower and BR sink being very close to the water heater. Almost instant hot water at the kitchen sink and shower.
We also quite often entertain a number of guests, so having comfortable seating for 5, plus the dining table and chairs are in the same area. So, having 5 or 6 guests in for a meal or drinks happens often and comfortably.
Of course if it's nice outside, we'll be sitting around the fire during the evening.

This has been interesting seeing the dinette preferences by those who responded and their reasoning. I'm thankful that we have options to chose from. However, as for me, when I was in the market for a motor home, if the
dinette was on the dirver's side, I didn't consider it and continued with my search. Also, I despise a motor home that has the entry door in front of the front axle. I only considered mid-entry motor homes. But many people like them as I see a lot of them. I do laugh when I am at an RV park and a motor home with the entry door in front of the front axle cannot back their RV back far enough to step on the concrete pad when they walk out the door. Or if it is raining and their door is three feet past the awning.

In many, many years of motorhome ownership and well over 100,000 miles of travel in our coach, I can honestly say that I have never given a moment’s thought about which side the dinette was on.
What difference does it make? None, as far as I’m concerned.

My parents mid 1990's Class C had the dinette on the PS. Our 2014 Tiffin Allegro Bus has the dining table on the PS. So, I don't think it is a new trend.
We didn't consider which side the table was on when we were looking at MHs. I want the dining table to have the best view, but that varies by the park, site.

Our 5th wheel Crusader has the dinette on the passenger side, we saw many 5 wheels before we picked this one, we picked it for that reason principally.
