My last post on this is that I spoke to our local Electrical Safety Authority and was told that there are three reasons for requiring a GFCI receptacle near a kitchen sink. A live appliance could fall into the sink; there could be a situation where there can be a path to ground via water in the non-metallic piping of sufficient current to trip a GFCI; and that there may be cases where metallic piping may be installed initially or retrofitted. Electrical code requirements for RVs are detailed in article 551 of the NEC.
