Don't ever let the rear tires leave the ground.

The distance between front and brear jacks and their length would give you the numbers to do the math. Don't raise the rear tires off the ground or your parking brake becomes useless. At the door, raising the RV too high makes the steps out of reach.

The jacks won't extend beyond their limits, so no danger of having one drop off or being over-extended. You could put blocks under the tires or jacks to raise the RV higher, but I'd look for a better spot.

I suggest you look online for a manual for your make and model of jacks to read up on them. Always use two jacks at a time, both left, both right, or left front left rear, right front, right rear. That way you're not putting a twist into your frame. Doing it so the frame twists is a good way to pop a windshield out or jam up slides.
If you have air suspension, dumping the air from the air springs means you don't have to raise the RV as high to level.
Thanks ahead of time

If you have slides, read your manual to find proper procedure for leveling then slides or slides then leveling. Different steps for different RVs.

I've been on some severely unlevel pads & so long as I had enough wood boards/blocks to go under the jacks, I've been able to get level enough for the fridge to work properly & the water to go down the drain (instead of pool in a corner) of the shower. I NEVER take the rear wheels off the ground & on only 1 occasion (didn't have enough boards) had a front wheel off the ground a few inches.

You could get better answers if you posted your coach info (make, model, year) and which jacking system you have.
Any situation that puts your rear wheels off the ground or your leveling system giving you a "can't level" error message, is past your limit. Your best bet - move the coach.

Also, your manual probably instructs you to chock you wheels to prevent bending the jacks if the rig moves substantially during the leveling process.

If we're nose high on boards, chocks go on the rear tires for sure.
