Great job, that's exactly what I am planning to do. Your MH inside looks just like ours. Is it a Triple E Embassy? Did you attach the TV bracket to the side shelf or to the side of the cupboard? The drawers look good, I'll have to consider that. I was going to us a hinged door with some shelves inside.

I also removed my old TV from the box in the dash. My fix was not as elaborate as some of the posts. I built a box to slide into the opening equipped with brackets for adjustable shelves for magazines and campground directories. The front of my box is open, but the shelves are one notch higher near the opening to keep things from sliding out. Across the top of my box I installed a 1x4 and mounted a mobile TV arm to it. To get to the magazines I pull the TV out and swing it to the side. While traveling the TV is pushed back against the box. I did this modification a few years ago and we are very happy with the results
Good luck.

Yes it is a 2002 Triple E Embassy. TV bracket is attached to side shelf with bolts and locknuts. Do not use wood screws. I attached a small strap at the bottom of the TV with a plastic clip so it does not swing out when on the road. We have driven about 12000km in the past year and TV is still mounted solid and works great. I was a little concerned the road vibrations and shaking would damage the LED TV but all ok so far.
