Shower backs up before grey tank is full
The shower water starts to backup in the pan when the tank level shows 1/3 or 2/3 full. The coach is perfectly level and this has occurred several times. Additional water can be added to the tank via the kitchen or bath sinks. My coach model is a 2019 Adventurer 27N. The tank level is hard to see because of the grey color but the one occasion that I was able to check it when this occurred, it looked around 2/3 to 3/4 full.

Are you sure that the shower goes to grey and not black tank?
Some MFGs do plumb them that way......
How full was black tank when shower backed up?
Unfortunately your Winnebago is a new model and no plumbing diagrams are available.
the other 2019 Adventurer models are just not for your 27N
So contact Winnebago and inquire......

Try it with the shower a bit more "up hill" from the tank and see what happens. Then again, the drain pipe may be routed away from the tank before it goes toward the tank.

Before it was an Adventurer 27N it was a Vista LX 27N, and before that it was just a Vista 27N. The plumbing and electrical haven't changed.

We have had the same. I suspect too many suds in the tank actually slows the flow. That statement may not make sense to some but seems to be the case. Also pull the drain cover you might have a partial blockage there.
Does the shower pan drain down slowly.....ours does as the gray water level increases.
Also the water level lights are not accurate at all. They can show very different levels as ambient temps change.

Sure sounds like hair clogging the drain. Used to happen to us. Pulled the drain cover and removed beaucoup hair.
Solved the problem with wire mesh screen from Walmart. A 3 pack of screens was less than 4 bucks. The small one fits the bathroom sink. The mid-sized one fits the shower drain and the large one fits the kitchen sink.
All 3 are doing a great job for us.

Sure sounds like some sort of pluggage. Being a new coach maybe there's some construction debris in the trap or drain line. Try calling Winnebago Tech Services at 800.537-1885 to see if it's a common issue.

The shower does drain to the grey tank, not the black. Although Winnebago doesn't have documentation on-line for the 2019 Adventurer 27N, the model has been around for a while as a Vista and Vista LX.
The shower drains fine when the tank is empty it starts slowing down and backing up when the gauge reads 2/3 full. The coach is only six months old and hasn't had the time to build up any hair clogs anyway.

It starts draining slowly then pretty much stops draining. I thought part of the problem was the placement of the tank sensors. They are very close to the top of the tank on the right side so a slight tilt to the left might not allow a full indication when the shower backs up. I saw a 2016 Vista 27N on a recent camping trip and was able to see their sensors and they appeared to be exactly the same. The grey tank is unusual in that the bottom is tapered up towards the right side and supported by foam so there's a considerable amount of space towards the left side. The sensor positions just don't appear to be appropriate.

That's sounding more like the tank vent itself. The more water in the tank the more gravity pressure required to pass through the waterless trap.
