The only time I have turned mine off in 10 years was when using the The Chesapeake Bay Bridge–Tunnel. Had to stop and show the attendant is was turned off.

Propane ON
Keep it on as long as we are operating the refrigerator. When plugged in it always seeks out electric. When we pull the plug, it transfers automatically to propane. Keeps fridge nice and cold. But in answer to the question, yes it is on during travel. Hot water is off though. It stays pretty hot throughout the duration of the travel.

There are MORE safety features built into an RV Propane System and the Propane Appliances which has 0.4 psi then the fuel system of the RV Vehicle which can have 20,000 + psi

If you search the web for fires started at gas stations because a propane device was on, you'll find zip or close to it. While possible, there are many bigger safety issues for us to worry about.

We don't turn off the propane while traveling, but we run the fridge on the inverter so don't have to worry about fueling dangers.

in over 75,000 miles, 3 years, thru Canada, Alaska, and the US, we've turned the propane off ONCE during that time, and I can't even remember 'why' or 'where'.
tunnels would be the main areas that you see a requirement that the propane be turned off, but I believe that it's less to do about if your propane tank is 'on' while passing thru, and more about if the traffic stopped while you were in the tunnel and a spark from another vehicle were to somehow trigger a propane leak explosion. I don't remember ever being physically 'checked' at a tunnel. Some might ask if the propane tank is 'off', though.

If your not using it a lot why take risks just leave off. My fridge powered by inverter while underway.
