Seems like she is unsure of what will be happening. Feelings aside camping is not for everyone.
You will have to show her that it can be enjoyable. Try a night or two in the driveway to get the family used to the different space. Follow that with some short jaunts to destinations that have interesting things to do.
Make sure both your wife and kid have a good time and you will soon be golden.

Sadly, after a trip or two and if she still does not like it, you basically have two choices. Give up your dream of family time or take the kids and go without her. Wish I had made that decision when I was young, but now its just too late for me.

I'm betting that after a trip or two, she's gonna love it. Thing to do is to let her pick some places that would be amenable to both of you. After arriving and setting up, you'll need to do some of the cooking, help keep it clean and help with the 1 y/o. After a few trips, she'll probably be checking out other MHs and looking at the magazines
Good Luck, We have gone from tenting to an 8' tent trailer and then a 14', a 27' TT and then my favorite 32' Cougar bunk house and now finally to an '01 DP MH.

My wife was the same way six years ago, now she loves it and even plans our extended trips. She does not "camp", she "glamps" (glamour camps).
