Start with the longest wheelbase tallest Sprinter, transit, promaster. Add a bench seat behind the cockpit and build or have built the amenities you desire. Probably your best bet might be a Crew van with second row seating and 3 point safety harness,check the Transit and Mercedes sites. Then look for a good upfitter. Good luck!

Thanks again for the replies everyone! We've found a couple of models that fit the bill, like the Roadtrek Zion and Winnebago Era.

But I think we've come to the conclusion that a van is still too small for our needs currently, so we're looking at small Class C's instead.
