Sound Deadening

Has anyone put additional sound protection on the engine compartment to quite the coach? If so what did you use?

There are all types of sound deadening materials available, especially for audiophiles. If you're talking about a rear engine RV, you could perhaps use soundproofing foam board or sound deadening mats. Use Google to search for 'auto engine soundproofing' and you'll find a variety of strategies, you can decide what you can use in your situation. If you close the door to the rear bedroom, that will cut down on a lot of the noise.
