On #1 that is the normal standby mode with time and temperature. You can turn it off in settings. I left mine on in the 14 for 4 year and never had a burn in.

Can't help with #2.

Pressing the knob doesn’t fully turn the infotainment system off. It goes into standby mode. That screen has been on for 2+ years in my coach and no sign of burn in. Screen burn was actually an issue with CRT and Plasma displays. Still it would be nice to turn it off completely when not in use. Keep in mind that the the VegaTouch gets time and date from the Infotainment GPS.

During the 2+ years and over 30,000+ miles in our coach your post prompted me to the AV function a test (for the first time). Yep it works along with the volume. Past issues with the VegaTouch after it was replaced or a component connected to were typically incomplete configuration after the replacement. No doubt a call to CS will identify what configuration setting was missed. At least that is my guess. Actually I can’t see the benefits of operating the dash infotainment system from the VegaTouch panel. Maybe I’ve overlooked something.

The Infotainment System does shut off. Just go into settings. It is there.

I found a setting to turn off the standby screen. Maybe not a bad idea for the longevity of the screen.

Tom, I’m not an expert by any means, but there are components that are more sensitive to cycles than hours.

It will be on the menu screen/setting and I believe it is screen something? on or off. The default is on. While on the setting screen, it's a good time to get familiar with other features.

On our 2017 when we are parked I select "Menu" and then hit the toggle for "House Mode". This turns the screen off, but if I want to say... see the temperature I just touch the screen. The screen comes on for a few seconds and then turns off again.
