Not all RV repair shops / service personnel are created equal. There are many, many competent folks out there. There are also a few that are mostly concerned about moving as much cash as possible from your wallet into their wallet. The challenge here is to figure out who is competent and who cannot find their bottom with both hands.
I am only going to discuss Aqua-Hot service, because that is what I am most familiar with.
Aqua-Hot has a well established, formal service network. Their service locator is on their website here:

The Authorized Service Centers that are listed have trained personnel, have a replacement parts inventory and have worked on many Aqua-Hot units.
If you want to test a service person knowledge of the Aqua-Hot system, ask the person to explain how the Hydro-Hot / Aqua-Hot Model 450 hot water heating system works (I think you have some first hand knowledge of this). If the person is not able to explain, then they sure won’t be able to troubleshoot and diagnose the problem.
