Check engine light
Can anybody tell me what this check engine light icon is? looks like Wind and Rain? Also has a warning horn blowing.

Could be your def, looks like it’s on the last bar. After looking again I’m pretty sure it’s due to low def.

Agree, that's the icon for low DEF. It symbolizes "exhaust" by the puff of smoke, and fluid/fluid level by the drops and fluid level "waves."

I put 5 gallons of d e f in and rebooted the couch, still showing the same thing maybe a sensor?

Unplug the harness on top of the DEF tank for 1 minute and then plug it back in to see if this cures the false reading.

It is possible that the low DEF has set a code.... and that code will not clear just by unplugging. I dont know for sure, but if Don's suggestion does not work, I would get on the phone with Spartan CS and run this through them.... You may need to go a Spartan certified shop and have the code cleared.
If this really is a low DEF warning, you are lucky.... if you had kept driving, you would soon have encountered a shut down situation and a Cummins de-rate process and be limping along the berm of the road.

That is what I got before the engine got derated and needed a force regeneration to get back on the road

I suspect you got a slightly different icon. The one for the DPF (diesel particle filter) looks similar and the DPF does require a regeneration. Low DEF does not require regeneration but it also will cause a derating of the engine and eventually a no start.

As a side note, I suggest you not run your def that low on an ongoing basis. You will just get your filter dirty quicker and you never know how accurate they are reading.

If Don's suggestion does not clear it, sometimes cycling the ignition several times will clear them.

It tells me your regen cycle is working. You either have to have a Cumins place reset it ($$$$) but many times a good hard pull up a hill will clear it (burns out the particular matter in your catalytic converters).
Two things to watch for: don’t park in tall high grass, the exhaust is hot and can start a fire. And two if the carbon buildup is big enough your engine ECM could dial back power to “limp” mode.

Okay, so I gave up took it to Spartan service center they are replacing the DEF head unit hopefully under warranty? 2017 Anthem 25,000 miles
