Check engine light
Yesterday while moving to a new park my check engine light came on. I had only a short distance to go so I kept going until parked. I checked every fluid level and everything else I could and all was OK. Started the engine again and the check engine light was off.
My next stop is NIRVC, about 250 miles away. Would you just go ahead and move if the light stays off? Or should I take some preventative action?

At this point, with the light off, there's not much preventive action to take, save to pull up the codes that may have been set. If this was my situation and I was unable to retrieve the codes, I would go ahead and start my journey and have the situation checked at NIRVC. Still, my first attempt would be to find out the codes.

My understanding is that if the CEL disappears the code that caused it will not be stored.
OP, If the CEL comes on again, don't shut your engine off until the code can be read. Try to get to NIRVC during service hours. I'm sure they can spare a tech long enough to read the code.

You may be correct as I am not familiar with his particular coach/chassis. I only know from my own experience when the CEL came on, went out later, and a code was set that the tech retrieved.
Your advice to leave the engine running should the code reappear is sound, however. Does the OP's coach have he ability to identify a code through the on-board electronics?

Good question. I used an aftermarket code reader when my ACC faulted. Once I shut the engine off it was gone. The last time I left the engine on and retrieved a 5606 code

My 2020 Reatta XL Cummins L9 had a similar issue with the check engine light with no codes. Turns out it was me, I needed to wait until all the lights on the dash go out and plus add another 10-15 seconds before starting.
The light would also come on when a DPF REGEN started, just about every trip in it. Again, bad me, my patience is in short supply, I just needed to be more mindful during startup and give it time to initialize all those EPA sensors. A few months later and not a single warning light.

Sounds like you talked to someone at Cummins, the engine manufacture.
