Your 2018 coach may not have the same HVAC dash control system as my 2016 Anthem (see attached) but I had a similar issue with my dash AC as you described, multiple times since I purchased it new in 2016.
The first time the source was the little green switch which you push to activate the AC. The parts guys at NIRCV keep these switches in stock because they told me they have a high failure rate. The adjoining switch for air recirculation is also problematic so they also keep these in stock. NIRCV service replaced this green switch under warranty and shazzamm, the dash AC worked. I just replaced this same switch a second time and purchased a third one in advance of the next failure so before you spend a bunch of time and money, check the proper operation of this $51.45 switch.
I also replaced the high side AC fitting which sits on top of the Cummins engine once and recently repaired a leak at this same fitting...the mechanic making this repair told me that he has found leaks at this location on other coaches in the past and that he improved the way the hoses routed to this fitting were secured to hopefully better resolve this issue. Both of these repairs required evacuating the AC system, replacing the receiver dryer and recharging the system with R134A...dash AC system back to normal operation.
Your AC issue may be more complicated than mine but it never hurts to check the easy items first.
