I have a 2016 Cornerstone with 10,000 miles on it with a 600 ISX what fuel mileage should I expect to get driving in Florida at 71 or 72 miles a hour

Slightly under 7 at that speed would be my expectation. I get 7 or barley over at 63-65 most all of the time.

Towing? Wind direction? Both will affect. I'm lucky to average 7 towing F-150 with calm conditions. Once got almost 9 on a leg with STRONG tail wind.
Your engine still isn't broken in, either.

Paul, DSL417 just did a post regarding Cummins ISX upgrades and performance. Might want to call Cummins and see if you are do any updates and TSB's. (Technical Service Bullitens)
I can relate to my 450 non-upgraded ECM. On a trip to CA last year I averaged 6.4 MPG and lacked power on the hills.
This summer I had the updates preformed at Cummins. It took 13 computer updates, my mileage increased from 6.4 to 7.3 at 68-70 MPH and I now have power coming up an onramp.

My ISX 650 is averaging 7.6 over 47,000 miles. Goes down a little in the winter with winter blend fuel too.

Think the older engines (without some of the pollution control junk) get a little better mileage.

Yep, and no DEF, only drawback, black smoke coming at toad and soot on it once in a while. JMHO
