It could be your Search Watts setting on the inverter control panel. If the fridge is not asking for cooling when you unplug, and if the search watts is set to 5 watts or greater then it may not be enough to trigger the inverter to pick up the load. You could set your Search Watts setting to off and then it will pick up any load when unplugged from shore power. From the inverter control panel manual:
SETUP: 01 Search Watts - Allows you to turn off the Search Watts feature, or adjust the power level to determine when the Search Watts feature becomes active. The power level range selection is 5W to 50W. If this feature is not needed, select Search=Off. When search is turned off, the inverter continuously provides full AC voltage to the loads.
Default setting: Search= 5W
