After fueling on are way to North Myrtle Beach we got a engine warning light " Low Engine Coolant" Coolant levels are all good. Also disconnected the batteries in a attempt to reset the light no luck. Any suggestions?

If the engine is not overheating I would suspect the coolant level sensor is bad. I just had my sensor replaced after living with the warning for about 6 months.
