I believe it's always done that, but I've been paying more attention lately since we had our windshield replaced. The repair tech said that the windshields on this RV need to be glued in because the front cap mounts get compromised over time and the front cap will flex a lot, which could cause the windshield to come out if not seated and glued properly.
So now I'm worried that we've got bad mounts on the front cap which will cause problems over time.
So I've got two questions:
1. Does the dashboard always move side to side, is that okay?
2. Have any of you had any issues with the mounts on the front cap being broken or otherwise not bolted down? What should I look for?

This is not normal at all. It may be possible that the RV techs did not replace the screw/bolts to secure your dash after they installed your new windshield.
Your dash should be secured to the front cap via screws/bolts.
If your front cap is loose, that is a different situation all together. Seems unlikely because there is no need to loosen your RV front cap to replace a windshield. It is far more likely that they failed to secure your dash after the windshield install.
