We made that exact trip in June, use I-40 to cross into AZ then north on 191 to 160, west on it to 89 that to Kanab. No major grades, good two lane highways. Watch your speed in the reservation the Navaho police will be watching it. We got off with a warning one year and I've been careful ever since. We've gone that way with variations lots of time over the years. You can find good pottery and jewelry at the roadside stands. We spent 3 days in Kanab did a road trip to back side of Zion (the part not often visited).
You'll get close to Canyon de Chelly if you want to be extorted...heh. And the Hubbell trading post which we enjoyed.
