I forgot which button, but in addition to outlawten5's answer, holding either the set button or the resume button should cause the fast idle to idle up faster while the other button will idle down slower.

In a New Cascadia with ICUC dash (the analog gauges) the engine idle adjust is one of the Quick Access screens. You can get to these screens with the lower-right button on the right-side control pod on the steering wheel. It's the button that looks like two overlapping pages. Not sure how to get to this from the digital dash (ICC5) but the manual will have it.
