Newbie advice beach access

Hello RV'ers ,
We are a family of four in san jose , california . Our kids are 10 and 4 . We really wanted to get out to the beach while staying safe during COVID 19. However we don't really want to use public restrooms and bathrooms. Hotels are also kinda iffy right now.

I was toying with the idea of renting a "small" RV and going down somewhere with beach access so we have a bathroom for us when we need it. We would also prefer to go to places with not too many people.
So it seems that there aren't a lot of places where you can park an RV walking distance to a beach. Westport beach sounds like a good idea but since I am new to this , don't want to get too adventurous. To add context , I have camped ( in regular campgrounds not RV) a few times and consider myself a good driver. Handy with stuff around the house .

So here is my plan -
1. Rent a class B ( or class C) motorhome
2. Go on a sunday come back on tuesday
3. Find a beach that is not too crowded and where we can park temporarily in the day while we are playing in the beach. We can also rest in the RV in the day time.
4. Find a RV site nearby where we can park overnight .

So is this plan feasible given my lack of experience in the RV world?

Are there beaches where we can park next to the beach in the day ? Are small RV's allowed to park in regular parking lots like the carmel beach or the santa cruz beach parking lots? Any recommendation of places.

Any advice will be appreciated.
