As most others have said - Jetty Park. But it is hard to get in. Most sites are booked every weekend. So the best chance is during the week. We just spent Monday to Friday there (left on Friday) because it was booked for the weekends on either end. Be wary of the site you choose - some are definitely only for small RVs (and low ones). Bigger rigs will like the few 50 amp site in the open. Most folks can survive on the 30 amp sites (we did in the high 80's but our rig isn't painted black on the upper parts).
Now - that's the best RV park to watch from. But if you can't get in, most any park close by is OK; you just have to drive to the viewing sites (Jetty Park, Port Canaveral, anywhere along the Indian River, the top of Max Brewer bridge, places along hwy 528......
If you're not in Jetty Park then be sure to get to your chosen viewing site early. For non-manned launches maybe an hour or 2 ahead of the liftoff time, for manned launches at least 4 hours early for a nice spot.
Almost done - know that non-SpaceX launches have about 50/50 odds of going on time and on the date scheduled; SpaceX has better odds of meeting the schedule - weather dependent. So you want to schedule to be around for a few days just in case.
