Stayed in Lockhart SP last year and liked it a lot. Between San Antonio and Austin with plenty of BBQ,fhu, and a 9 hole golf course.

Can't beat Buckhorn Lake in Kerrville.
Be VERY careful riding mornings and afternoons. The area is infested with "Hooved Rats" er deer.
X2 on the 3 Sisters runs.

Fredricksburg in my opinion is more central to the Hill country. Especially for the motorcyclist. There are several RV parks there with a fairly new one on HWY 87 north just outside of FB. Lots of good places to eat in FB.

Check out some of the Texas State Parks. They are very nice! Here's their website. We've stayed at many of them. I really like Pedernales Falls State Park, Inks Lake is very nice too, as is McKinney Falls. You can search by region on the site, which includes Texas Hill Country. Enjoy!
