Made me look! LOL We are going to look in the Prince Edward, ON area just south of Belleville, ON. We just thought it might present a nice place to relax for a bit.

You probably could use US funds most anywhere in Canada but with the US/Canadian exchange rate fluctuating daily, it can be challenging for some businesses to calculate the correct change to give you or what your bill should be in US funds. If they accepted your payment in US funds at par , you are losing out on the extra value the US dollar has in Canada currently. Best to buy some Canadian funds at banks and get full value for your dollar.

Now you're confused, Prince Edward Island is a Province on the east coast, Prince Edward Island though is also an island that is only an island but for about 100' of water and lies due south of Belleville Ontario in Lake Ontario.
Since the OP said he was hitting Toronto, Ottawa and Montreal, but Quebec City was too far to go it's a safe bet he's not going the extra days drive beyond that to get to PEI.

Because of the magic of the international credit card networks, using an out of country credit card gives the merchant a transaction in his own currency no matter where the card is used.
That's a lot different from trying to use US currency in another country. Trust me, you may have been able to spend US currency in other countries but, as someone else has already pointed out, you probably suffered significant exchange rate losses compared to what you would have gotten had you made the exchange at a bank or simply used a credit card.
And, maybe with the exception of Mexico, Russia and some other third-world countries where people on the street want greenbacks, you preserved the impression of Americans as people who don't respect other countries and cultures.
