Down in that part of Wyoming it is pretty open - few of the Reservoirs have interesting CG's which might be Fun - My kids did the 2017 eclipse with friends and Loved it.
I'm a Colorado fan so I'd make a few more suggestions if you are into exploring that area.
Snowy Range, While still in Wyoming is close enought to Colorado -
https://www.travelwyoming.com/listin...e-scenic-byway - is a beautiful area and while it is not undiscovered it is "Less" discovered and is a fun Drive/Hike.
Also RT 125 down towards Lake Granby is a fun drive/area and will expose you to the Back Side of RMNP, the road less traveled in Colorado has never been a disappointment.
With your 4X4 you would likely enjoy a few of these trails -
https://www.alltrails.com/explore?b_...541992187499&a[]=off-road-driving - Colorado has Trails. While the rules and enforcement of the trails registration is far from standard it is good to be aware of this - not really sure if a road/trail with a route designation needs of road registration at least read before you go -

If RMNP is not for you Steamboat Lake is Beautiful but not Undiscovered - Stagecoach Lake is a little less "discovered but still will be a challenge on weekends - if you are headed back to Nevada you might look at a loop that includes - Breck - Leadville - Twin Lakes and a drive on Independence Pass (Toad) - Cottonwood Pass - Buena Vista - Gunnison - maybe Lake City/Ouray/Silverton/Telluride?Dunton - Black Canyon of the Gunnison and out to Moab.
Think I've venture FAR from the original Question and should STOP.
Best of luck - enjoy the trip,
