I have done it twice. Towed the Ranger and only had the hitch drag in one sharp corner going through a dip.
If you are OK driving around in most cities, around in a parking lot and in campgrounds, there is no reason to shy away.
Just take it real easy and let the traffic go past when it's clear.
I'm over 55 feet in total, so it can be a while before a pull-out comes along.
It is a great drive except for just North of SF Golden Gate Bridge to South around Half Moon Bay RV Park.
I vote you at least do a part of it, and maybe take your toad on the rest.

South of Big Sur there is ongoing construction with temp closure occasionally. The are redoing repairs done to section wiped out by landslides. Also if rain is predicted that area will be closed.

Wherever you are, traveling north is preferable to traveling south since you'll be in the lane away from the drop-offs in the scary spots.
