Speed Rating
How critical is it to adhere to the speed rating? 75 Seems low for a g rated tire

Original Westlake tires on 16k lbs 5th wheel. One tire detreaded and wrapped around the axle and had to be cut off to change to spare.
Sailun 637 no problem 3 years now, up to Alaska and back.

I’m very cautious about weight. Never more than 85% of GVW or Axle weight. Monitor tire pressure while driving but it seems 75 is low for such a large multiply tire. I guess maybe the heat seems to be the biggest factor?

I would say common sense would be the biggest factor. There are not many cases where I would say a trailer needs to be going over 75mph to be honest. That covers the speed limit on the vast majority of the roads in the US and many have laws for trucks/trailers that limit speed below the limit set for cars.

We can quibble over should they do that, but are trucks or vehicles towing trailers legal to do 80 on them without limit? I have no idea what state you are in obviously. I see a lot of states where that is not the case, but do know in Oklahoma there are 80mph sections of turnpikes where I do not see limitations posted (could still be a legal limit that is not posted - no laws against that as you are expected to know the rules of the road you are driving on - but I clearly do not either lol).

Just because posted 80 doesn't mean one should be towing at 80
'G' rated tires on trailer are more about Load Ratings with speed ratings being secondary
Sweet spot for relaxed towing, fuel economy etc is around 65

IMO- Good grief Charlie Brown, why go that fast towing a 5th wheeler?
The math is pretty simple for fuel economy. The two largest factors by far is speed and frontal surface area. Whereas we can not change the frontal area we can easily adjust our speed. In those calculations the value for speed is squared. So a small difference makes a large difference in mpg. The other factors I consider includes stopping distance, what kind of brakes do you have? Other key factor is driver alertness as to taking corrective action to any road condition.
Our top speed is like many others something around 63-65mph with frequent breaks. To me the journey is part of the destination and I want to enjoy it.

Sailun S637 ST load G tire vs Goodyear G614 RST = pickles vs apples.
The G614 RST is a LT235/85-16 G at 3750 lbs capacity with 75 mph speed rating.
The Sailun S637 in a ST235/80 -16" G at 4080 lbs capacity or ST235/85-16 G at 4400 lbs capacity.....both Sailun sizes with a M speed rating (81 mph).
Know your trailers axle capacities and actual scaled axle loads.

This matches what I have found to be the case for my truck, I tend to stay at or under 65 for normal towing.
