You just need to get out on dealers' lots and get into a few showers.
I'm just a little shorter than you, and I have no problem in my Grand Design Reflection shower. Mine has a plastic bubble over the shower in the roof. And sometimes you can't walk around in the shower much--taking a Navy shower.

I wish you luck my fellow tall person. At 6'4" I've just accepted the fact that RVs don't fit me well. Not just the walking areas either - the kid sized furniture is super annoying. I regularly replace the mattress with one of real length and have often replaced furniture with normal sized stuff. As for headroom, the 5th wheel is your best bet by far. Bathrooms are always a struggle though. I'm not aware of anyone that makes an RV with us in mind.

Same problem here. 6'6". You can find them just have to walk through a bunch. Look for "full profile". There is Low, Mid, and Full. All have different ceiling heights. Also, look for rear bed and bathrooms, they usually have a ton of height.

I have 2 friends with Cedar Creek fivers. While I don't know the bedroom ceiling height, I know that it appeared higher than any I've seen plus its a barrel ceiling.

Have you looked at the jayco pennical ? Our 36fbts is going to be too be longer then you want at 41ft but it would be worth looking at. Our bathrooms seem big enough for you but I am only 5.10.

Spacecraft will build you a semi-trailer with extra tall walls...the AC will be a mini split in the basement so can use the extra height for interior space so you get nice tall ceilings with no steps.
You must use a big boy MDT or HDT to pull it, but they’ll build it as short as 28’ if you like.
$$$$$$.

i'm 6'7". we spent a whole weekend trying out 5th wheels. bumped my head on nearly every one! then we found the cardinal 3825fl and we loved it. i can stand fully erect everywhere in the trailer from front to back without hitting the 81" tall ceiling. and the shower is big and has a skylight so it is roomy. there are two door frames that i have to duck for (bedroom and bathroom) but you soon learn where they are. the tough part is bending over to access the front storage compartment. there are other cardinal models. take a look at them. also note, the trailer is as tall as the semis on the road 13'6". watch for tree limbs!

Jayco Pinnacle or North Point series. Both have 6’8” upper deck head clearance. I am 6’5” and had same issues when shopping.

Grand design has a new rear bath model where the tub of the shower is set down in the floor giving a ton of head room.

I'm 6'6" 325 lbs. I'm very comfortable in our 2003 Laredo....except the shower. Headroom is fine, there's a domed skylight, but I'm just as thick as the shower stall is wide. I manage though
