Maintaining Hot Water Pressure
In my 5th we never experience a cold surge in the shower after turning off the inline shutoff valve. In our Minnie we get an unpleasant cold surge after turning off the inline valve.
The 5th has an Atwood heater with a mixer on the backside, no such thing on the Minnie.
I was thinking about ways to solve the cold surge problem. One idea is to install on the hot side of the heater a Shuflow pint size pressure tank; or add a second water pump. Another potentially simple solution is to add a check valve close the shower facet.
I have parts for all three solutions. Any thoughts about pitfalls or other issues?

Do you have an anti-scald shower control? Is it malfunctioning? Or working correctly for that matter?

I do not believe such a thing was installed. The factory build was pretty plane Jane stuff. No expense was wasted to upgrade.

It's common for shower heads to do that. Safety thing. You will have to replace the complete shower faucet to remove this issue. A second water pump won't do anything. One pump feeding another may not even work correctly. The extra tank will just hold a bucket of water somewhere and won't do anything.

We had the same issue. I did some research and it seems that the cold water line has more pressure than the hot water line due to the hot water coming from the heater vs the cold water being a straight shot. If you cut the water off say at the shower head while you suds up, the cold water can overpower the hot water. Thus, when you cut it back on you get a blast of cold. I installed the below liked valve where our shower hose connects to the control valves and use it to cut the water off there. No more cold blasts. Hope this helps.

I may be barking up the wrong tree, but was your trailer winterized and this is the 1st use of the season?
It may be possible that the winterization valves might not set correctly.

I know how to winterize and dewinterize my RVs. The valves are set correctly. This has always been an issue with this RV.
Never experienced anything like this with our Excel 5th, but the Minnie Winnie just is not built as well in many ways and I'm trying to close some of the gaps.

I installed the faucet W4KMA suggests, MY GOSH, it's fantastic. Set the temp once and forget about fiddling again. Turn the water on and off and volume with one knob. Was a little bit of a pain to install but well worth the effort. The hole centers were not the same as my original . In the link to the other thread you'll see that "REDCOLORADO" used a white plastic plate to cover up the original holes. I used a thin white plastic cutting board cut to size. ez-pz.

That valve looks very nice. However, Winnebago failed to provide any simple access to the back of the shower facet. That shower wall faces an outside wall. There is an 8" wall hallow behind the facet but the wall panel was never designed to be removed. So to change the shower facet the only options I see is to cut a hole in the interior wall or cut out a section of the shower enclosure.
Thus my basis to try find a different solution.

I got the cold water surge problem resolved.
Replaced the sad push button shower shutoff valve that came with the
Ox ygenic shower head with a quality unit (no more dribbles) and added a check valve to the shower's hot side directly below the shower pan. DW will be happy now.

Glad you found a fix and reported as such. I just saw this thread and was going to suggest a check valve on both the hot and cold side. If you have PEX you can get SharkBite check valves and it a super simple install.
fwiw: I had a Tiffin motor home with a single control valve/handle and always had the same experience - either too hot or too cold using an an/off valve at the shower head. My current rig has handles (not knobs) for hot and cold. I just shut them on and off as needed and don't get the hot/cold rush.
