I look at some of these Jed Clampett-mobiles going down the freeway and just scratch my head. Yeah, you can do it. But why?

The OP says his ATV weighs 800lbs. That is a big one. It will not be easy to load onto a truck bed and a toy hauler will be much easier to load. A toy hauler will open up the back and have its own built in ramp. Plus a toy hauler is built to do what he wants to do. It will sleep more people, it will haul his ATV and it will not over load his truck. It is a win, win, win.

So why would there be a accident? Kind of assuming a lot there. Overloading means you take precautions like slowing down and increasing the space between vehicles. Overloading a vehicle means you don't operate it as normal condition. It's not a end of the world your going to die situation if you take precautions.
