from WA State!
I haven't had a trailer since 1988 so I won't be of any help on this.

I don't have over 23,000 posts but I can tell you that Trailer Life- Towing guide for 2000 will tell you what your truck can handle.

GCWR is 20k. Tow rating is 13,600 only for an empty F-350 SuperCab SRW PSD 4x2 with 3.73 axle ratio, XL trim, and no other options.

The tow rating is overstated by a coupla thousand pounds. So for a simple WAG, provided you have not more than one passenger in the cab and nothing in the bed except the 5er hitch, then you could probably tow a tow hauler that grossed not more than about 11,500 pounds when wet and loaded on the road, without being overloaded.

According to my WAG, you'll be overloaded. But because you have the truck handy, you don't need to settle for a WAG. Here's your assignment for the week:
1] Load the F-350 with everybody and everything that will be in it when towing. People, pets, tools, jacks, jack stands, 5er hitch, campfire wood, toys, generator?, grill and charcoal?, and any other weight that might be in the truck when towing.
2] Drive to a truck stop that has a certified automated truck scale, fill up with fuel, and weigh the wet and loaded F-350.
3] Subtract the wet and loaded weight of the F-350 from the 9,900 pounds GVWR of the F-350 SRW. Or if your F-350 SRW has the short bed, then subtract the weight of the truck from the 9,700 pounds GVWR of the shorty.
If you don't have the hitch yet, then subtract another 200 pounds from the weight of the wet and loaded F-350.
The answer is your real-world payload capacity for hitch weight.
4] Divide the payload capacity available for hitch weight by 20% and the answer is the maximum weight of any fifth-wheel toy hauler you want to attempt to tow. The answer probably won't be anywhere close to the 13,600 pounds tow rating for that truck, and might even be less than my 11,500 pounds WAG.

Thank you. And @ 11,186 +1,157 Harley tirglide is way over the top. Not to mention food and clothing stuff. My wife thanks you all too. She loved the 5th wheel but it looks like a tall building.

harleywalt, Stopping is "one" of the most important issues when towing..... But "not" the trucks responsibility!!!! To adequately do that on a relatively heavy rv....you'd need a class 8 tractor (semi)! Study the construction of the trailer you are considering, and purchase a unit with more than the "minimum" brake system! Most rv's sold have the lightest axles/springs/brakes that they can sell to the public!! Most rv 'ers have no clue as the the size/rating of their units breaking system!
We once had a two axle 5er, that had 7K axles ( ride quality), but had 8K Dexter drum brakes. How do you say "massive"??? This system would bring the "entire" package (even if the truck brakes failed) to a stop rather quickly.
For turning the rig... They're all pretty much equal whether it be a 250,350,450, ect. You get the picture, they all have similar steer tires! JMHO

good idea to weight it on a CAT scale, but I'm pretty sure you're gonna be over. My truck is similar to yours (see my sig). My truck weights 7740 with hitch in the bed, a full tank and my butt in the drivers seat, leaving a measly ~2000lbs cargo capacity (GVWR is 9700). Your truck might be a little lighter depending on trim level, etc. but by the time you load your trailer for the weekend, that pin weight is gonna go up a bit, so you'll probably be over on GVWR and possibly GCWR as well.
