If you have the 3400 Champion Inverter gen then it should already have a 30A RV receptacle built in so you shouldn't need any kind of adapter. Of course you may already have checked.
The PD converter is about as good as it gets for battery charging.
I only have a 2000W Honda and I did just fine if I needed to charge up the batteries.
Like mentioned above don't sweat the details. Just fire up the gen and use it however you want. If you run it 4-5 hours everyday your batteries should be plenty charged.
Even then if you are conservative on 12V use you could easily get 2 days of use without a gen.

While testing the fridge, I turned on the converter when on 120ac with the batteries at 80% charge. The converter brought them (2 deep cycle 24s) up to full charge in just over an hour then switched itself off. I didn't test the DC output during that time though.

Thanks everyone for the knowledge. We made it through the week without a problem and are very excited to know we are able to boondock decently. Ended up plugging right into the generator and it worked perfect. AC worked fine on the generator as well.

Thanks again
