This is the first I have heard about this system. The principals look sound.
1) Installation will probably vary in difficulty depending on your RV. Most units I have seen will be more difficult than the video shows.
2) US RV's usually have higher water pressure, maybe 40 PSI. Hopefully the connectors supplied and the units internal plumbing will hold pressures well above 40 PSI. An added inline pressure regulator may protect against 90 PSI campground water supplies.
3) 12 volt RV water pumps and attached fittings contain water. There are check valves and possibly filters. This water will not be removed by air pressure in the "city water" pipes. This is the same as when using an external air compressor to blow out the pipes.
4) Refrig ice makers and water dispenser may not be properly blown out so easily. Clothes and dish washers may not be blown out so easily. Water system filters are also at risk. Black tank spray systems and complected plumbing valve systems for filling water tanks and such may be an issue.
5) Low point drains need to be opened the same as kitchen and bath faucets.
6) For safety, the water system needs to be sanitized, perhaps with bleach, periodically. Air in the pipes will not kill things that get in there during use. They will remain wet and things will continue to grow. Algae is easy to defeat. It will not grow in the dark.
All in all, it is doable. It just takes more time and effort than 2 minutes. If you install one, please post about how well it works for you.
I wish you good luck and happy trails ahead!
