Saw a guy last week with a spare under the propane tanks that had dragged it over a driveway transition and ripped it half off. Was hanging down and dragging on the ground and the tire was shredded. Not recommended unless the trailer has an off-road type suspension for better ground clearance.
I think going to the Hemi engine is going to help your pulling power but will do nothing for stability or load handling. If you are spending the money to upgrade, get a bigger, more capable towing machine. An Eco-Boost F150 has more room for people and gear and gets better fuel economy by a large margin than a Hemi Grand Cherokee in all conditions and will be a MUCH better tow vehicle.
As far as the bike rack, I would be surprised if the Grand Design did not come with a hitch receiver already mounted under the bumper that you can mount your bikes to using a standard bike rack. No stress on the bumper at all. My Outdoors RV came that way and they are in the same league, lots of bells and whistles and better quality than average.
Lastly, 770 is a little light for CCC. Most folks carry 1000 pounds of stuff on average if going on a 2 week trip or longer. I would add upgraded axles if an option. My ORV has a suspension upgrade option with roughly an extra 1000 pounds of CCC depending on the model.
Nice trailers but they are heavy. All those extras add weight that must be accounted for somewhere. Good luck with whatever you decide.
