Currently in Maine and heading into Nova Scotia, PEI, etc. Will I be able to receive dish on any of thier satellites?

Don't get your hopes up. You will need to aim the antenna at or slightly below the horizon to get a signal. You might do better on the Eastern arc satellites, however.

When we went in 2015, including PEI, with our Tailgater2 portable mounted on the rear roof area, we got Satellite everywhere we went - BUT, don't call or chat with Dish and tell them to update your Local Service area after you leave the US. For us, our last 'update' was for Calais, ME, the point of the border we crossed into Canada.
When we eventually made our way back thru NS, ON, etc., we used a US town closest to the border.

Even if you can't receive any 'locals' ABC, CBS, type channels, you may still be able to pick up all the others - Satellite 129 will be the 'lowest' on the horizon, and is usually the one that might be problematic to pick up, at least the farther NE you travel. Trees and buildings are more problematic than in the lower US, especially the southern states where the Satellites tend to be much 'higher' from the horizon.

this is us on PEI at the north side at Twin Shores Campground, a great place...

I use a Tailgater, and up into BC and Alberta I used Alaska as my 'state' when setting up, just to get the reflector looking lower on the horizon when it searches for the satellites. It worked well, except I had trouble getting the 129 satellite at times, I think just because of the small reflector size and 129 sitting so low.

If using a manual dish, Dish has a single satellite at 118.7 that's higher in the sky than either the eastern or western arcs. I just don't know if a US licensed receiver will allow any of the channels to be authorized, as that satellite is for Canadian programming on Canadian licensed receivers.

As others have stated, you will need to tell DISH that your service address is in Maine to get locals, you will not get Canadian locals via DISH Network. Also, you will need to be able to access DISH Eastern Arc satellites 61.5, and 72.7. The Western Arc satellites will be too low on the horizon to receive. We used a Pathway X2 and had reception all through eastern Canada when tuned to the Eastern Arc sats.

Here's the footprint of the Maine locals spotbeam from Dish.

Two years ago I was in Bangor and Portland, Maine and got excellent reception using the western arc. My home state is California. The dish was pointed at a very low angle. However, while in Stroudsburg, PA on that trip, I wasn't able to get satellite 129 which is the HD channels. The terrain was much more hilly than the two Maine cities.

The OP was going into Nova Scotia and Prince Edward Island and the western arc sats are almost impossible to receive there due to the earth's curvature. The eastern arc sats are visible all over eastern Canada.
