We are at the Rock Springs/Green River KOA in Rock Springs Wyoming this morning. Our Starlink speed is 170mbps down and 60mbps up.

Below is my latest speed test using Starlink App and shows 254Mbps download and 6.6Mbps upload speed and the note on the page says:
REMOTE STARLINK CONNECTION
This speed test will run over "Maggie". Connect directly to your Starlink network to run a Starlink speed test.
The interesting part is my Starlink is currently suspended and has been since April and Starlink Dish and the router is in the box sitting on the shelf in my garage. I don't have much faith in the accuracy of the Starlink App speed test.

Why would you question the accuracy of the app when it generically runs a speed test on whatever network your device is connected to?
I just ran it on my "other" network and it accurately measured the speed compared to the Speedtest app from Ookla. Seems to be pretty accurate to me.

We are at Lake Tahoe now and getting 145mbps up and 98 Mbps down with our Starlink. However, we are getting some disruptions due to the trees around our RV.
The kids report it is working pretty well while driving down the road. I’ll try to get them to do a speed test while driving when we hit the road again.

We are at San Francisco North / Petaluma KOA getting 210mbps down and 40mbps up with our Starlink. This is measured on the iPad from Fast.com.

Centennial RV Park in Montrose, CO. 6:50 AM
Starlink: 178 Down & 15 Up using the Starlink App and 169 Down and 14 Up using the Speedtest app.
For comparison sake,
T-Mobile Home: 437 Down and 76.4 Up using Speedtest app. Impressive.
Verizon: (wifi turned off on the cell) 9.47 Down and 23.5 Up using Speedtest app.
All tests were done using my Samsung Galaxy S22 Ultra cell phone.

Most of the time I get the same result both in the campground and while traveling down the road with T-Mobile being faster than Starlink. I use Caylx for going on three years without a problem for less than 43.00 per month. If I don't have a usable T-Mobile connection I can break out the Starlink. When I get to the campgrounds I check T-Mobile and if I have a good signal I don't have to worry about parking under trees and I can enjoy the shade.
I have the same results with Verion as you also. Most of the place I have been AT&T and T-Mobile has been a lot faster than Verizon.

My Starlink speed changes minute to minute. It can be 2 mbps then a minute later it is 200. Then occasionally the internet will go out completely for a minute or 2. I think that is when it is switching from one satellite to another. It can't lock onto a satellite for long before it moves out of range, then the antenna searches for another one.

230-ish down, 34-ish up in Winnemucca, NV this weekend. No significant outages; very steady and reliable.

I've never seen mine work like that unless the dish is blocked, even just on an edge. Have you checked the app for any blockages? What about outages, they track those too.
For me, using Starlink is like having a cable modem, not the fastest cable modem, but a steady bandwidth that I can literally swap from a cable modem to Starlink and notice no difference (at say 100mb down/20 up).
Just tested my speed in CT, 116 down, 15 up.

We have Starlink Best Effort plan at our house in western Louisiana, lately we have been seeing speeds of around 65 mbps down and 12-15 mbps up most of the time, which is better than when we first got Starlink about 8 months ago. By comparison our AT&T Hotspot we use while traveling rarely gets more than 5 mbps at our house during the daylight hours (over saturated tower is my guess), as we saw speeds of over 50 mbps with it on our recent trip to South Dakota.

Interesting. I assumed the low speed was due to local users getting priority.
We are currently at Okotoks Lions Campground in Okotoks, Alberta and getting 60.2 down and 2.7 up according to speedtest.net.
Last week we were at Lake Louise Hard Sided Campground in Banf National Park and I forgot to do a speed test but it was probably about the same as here.
