The long search cycle is normal for the in-motion when you first turn it on, at least for my Winegard RoadTrip. I don't use it in motion so I can't address your first question, but on the second you have to leave it turned on since you are on DISH network. DISH uses three satellites for signals, so when you change channels it has to change satellites if it is broadcast on a different one. If you turn off the receiver, the antenna will occasionally "hunt" and change satellites for some reason. I contacted Winegard and they said that is normal. The solution is what you have already found and what I do, just leave the receiver turned on and turn the TV off.
Like you, I did not install it as it came with the new motor home. My choice would have been the triple LNB Travelr, which I may change to at some point.
