You need to purchase what is known as a dog bone adapter. It has a 50a female plug on one end and a 30a male on the other.
As to running everything, your biggest current draw is the two A/C units. You may or may not be able to run both but it depends on size of the units. Try it, the worst you can do is trip the pedestal breaker.

If your RV has an Intellitec EMS Shedding device or some other brand of shedding device that accomplishes the same task, then you won't have to worry about what you can use or not. It does the thinking for you.
However, if it does NOT have one, then you have to wise in what is powered up and what is not.
30 amps provides you with 3600 watts of power to use, 120 x 30 = 3600.
50 amps provides you with 12000 watts of power to use, 120 x 50 + 120 x50 = 12000.
If you have a amp meter on the incoming 120 VAC power then you could watch that meter making sure you stay about 25 -26 amps.

I have had to run my rig on 30 Amps a few times. During the day when I need both A/C units to keep cool, I run the reefer on propane and shut everything else - including the battery charger - off. In the evening when it's cooler, I shut off one A/C and am then free to use a select few other loads.

The rules according to Readdy Kilowatt
Big ticket items include the Air Conditiones, Microwae, Water heater, any electric space heaters you have and... If your batteries are low,,, Your converter.
Medium is the Fridge and any kitchen appliances under 1,000 watts. other than say Can openers (IE: Cofee pot, Electric Skillet)
2 medium = 1 large
TVs and the like are "Neglegibal" and normally need not be factored. likewise the conveter once The bateries are full up.
20 amps one big ticket
Good 30 2 big tickets (Anemic 30 think 20 amp)
50 amp all you an eat.
Expect to trip the breaker a few times as you learn.
