Just out of habit, every stop I make for gas or to rest my legs I check the fridge. Every now and then I have to restart it but the fridge isn't ever off long enough to warm up the contents. I suspect a gust of wind hits it just right at times and blows out the flame, not often but every now and then.

Propane is only 0.39 psi...

Might need to investigate the shielding around your burner area.
Might need to check into diffusers for the lower louvered access panel

TT/MH etc absorption fridges are designed to operate on propane...while stationary AND in transit
