Just out of habit, every stop I make for gas or to rest my legs I check the fridge. Every now and then I have to restart it but the fridge isn't ever off long enough to warm up the contents. I suspect a gust of wind hits it just right at times and blows out the flame, not often but every now and then.

Mine only runs on AC or propane, so running on battery while driving isn't an option. Too bad really, as that would make things go a lot smoother. As it is, I pack the ice chest. On arrival we start the fridge. It takes a long time to cool down enough to move the perishables from the ice chest to the fridge. Kind of a pain.
Flame is the MAIN flame
It blew out/failed to relight--prove it lit so circuit board locked out further attempts (prevents raw fuel accumulating)
Sometimes that happens...wind across the exterior of RV while traveling can disrupt the fuel/air ratio
Propane is only 0.39 psi...
Might need to investigate the shielding around your burner area.
Might need to check into diffusers for the lower louvered access panel
TT/MH etc absorption fridges are designed to operate on propane...while stationary AND in transit
