I have a 2011 Dutch Star with a 8000 diesel generator. Generator starts runs and produces power but it will idle down and power goes off then comes back on. Any suggestions?

It should usually flash a code when you press the Stop position of the start/stop switch. Press it briefly. You should see a number of flashes, a pause, an then a number of flashes. Count them. For example, flash-flash-flash-pause--flash-flash would be code 32.

Also, when you say "goes off and then comes back on," do you mean the genset keeps running but power goes off and then back on in the coach? Or, do you mean it stops but restarts?

Genset continues run but idles down and power goes off and in a few minutes comes back on.

Did you try, after turning it off, pressing the Stop side of the button briefly to see whether it flashes a code?

Sounds like it’s a QD series unit. They have an inverter and ramp engine speed up and down to mange the load, heavier load the engine run’s faster. Light load they run pretty slow. Unless I’m miss understanding your issue I suspect you have a transfer switch problem. I would check the voltage at the generator when it’s running slower and you have no power. It will shutdown of it has any voltage faults. An easy test would be to plug in a space heater and see if it stops dropping out.
