Brand new unit? Call the factory. The old old Monaco had schematics on cd's etc and I bought one back in about 2009. I have tons of information but nothing on your late model unit.
If they have a factory CD you should absolutely buy it now. Get as much information as you can now.
As for all the systems and appliances I highly recommend finding schematics and manuals online and download them onto a thumbdrive and a few other places. Keep them synched when you make changes.
Being out of range of the internet you can still access important information and you can categorize them for sorting. PDF's will allow you to make notes.
Find your build sheet now while you can and find your paint codes as well.
The build sheet should have model and serial numbers of all your devices, hopefully. It can be impossible to get that information after something is installed.
As for running more outlets. I think it is just a pipe dream. The way these things are built it is possible but with few options.
Find where all your gfi breakers are and make a note of that. Some are really hard to find.
I use strip outlets when and where needed. Velcro if needed but keep in mind that can remove the thin paper the walls may be lined with.
