There is a rocker on off switch on the water heater which is sometimes hidden by the wiring etc, and one in the cabin. They both have to be turned on and there is also a breaker in the panel you can check

I don't have a switch inside for the 120VAC on my Suburban. There is a switch outside (lower left corner). I control mine with the circuit breaker inside.

1996 vintage.....

Suburban OEM
AC on/off switch in outside compartment behind/beneath gas valve...lower left corner

Atwood OEM
AC on/off switch on protective cover over the AC set of t-stats & element ...backside of WH Tank

RV MFGs ----
If they added another on/off switch inside RV it would be wired in Series with OEM OR use 12VDC to a Relay to allow AC to OEM switch
That additional switch could be anywhere.
Could be a in kitchen, bathroom, bedroom and could be like a standard Light Switch
