What is this weird little sensor on my fridge?

I recently replaced the old Dometic cooling unit in my fridge with a new Amish unit. In the process I found this strange little temperature sensor attached to the back of some of the sheet metal between the control board and the burner.

It wasn't connected to anything and it doesn't appear to have been connected to anything in ages.

I haven't found a whole lot online that tells me much except that it is somehow related to Lennox, which I've always thought of as an AC and Heating brand.

The temperature range it measures looks to be 70-15 degrees. Maybe it's some kind of trigger for an ambient heater to help the fridge when it's really cold?

Any wild guesses?

YES it is an 'ambient air temp sensor'
Part of a 'cold weather kit'\
Norcold even has an OEM part number
Heat tape is wrapped around the 'weak ammonia' line to add in coolant flow during cold temp operations
Dometic doesn't have a 'cold weather' kit per se. They have a Low Ambient Temp Switch on some models that bypasses Light switch so food compartment light stays on ...provides a 'heat source' that allows for longer heating cycles/Dometic suggests turning it off above 50*F

Previous owner probably bought after market kit or Norcold Kit

No kidding? I got it right? That's a first.

My fridge also had an additional high-temperature switch above the gas burner, which was apparently part of a Dometic recall campaign at some point. I went ahead and transferred it over to my new Amish unit but maybe that isn't necessary seeing that it's an entirely new cooling unit.

As for the ambient switch, I'm wondering if I shouldn't take advantage of having one and adding some kind of 12v heat tape to the weak ammonia line.
